Blog Entry Saturday: Cinco De Mayo Recipes


Cinco de Mayo is a celebration to commemorate Mexico's victory over the French at the Battle of Puebla. Here in the Southwestern United States, we have a special place in our hearts for the Mexican Culture and its strong influences. This is the day we all celebrate and appreciate all things Mexico!
I will share some of my favorite recipes I like to enjoy on this day. I could make Mexican favorites like street tacos, but I prefer to do something a bit more Arizona-southwestern, the Sonoran Dog!

Sonoran Dog



There are many customized version of the Sonoran Dog, but it all goes back to involving peppers, pico de gallo and bacon in some way to soup up a hot dog.

Pico de gallo: Diced seeded tomato, diced red onion, diced garlic, chopped cilantro, lime juice, salt and cayenne pepper

Hot dog: Wrap it in bacon and grill. 

Toppings:  Pico de Gallo, pinto beans, avacado, jalepeno slices, mayo, crushed potato chips

Prickly Pear Margarita


Another Arizona/southwest take on a classic. It's a margarita, but you add some prickly pear syrup. Prickly Pear syrup (you can find it at online shops like Amazon) tastes like a mix of watermelon and bubble gum. It's super delicious and the syrup can be used to make candies or on pancakes, but it's awesome in a margarita.

Tomatillo Salsa



1-1/2 lb tomatillos
1/2 cup chopped white onion
2 cloves (or more) garlic (optional)
1/2 cup cilantro leaves
1 Tbsp fresh lime juice
2 JalapeƱo peppers OR 2 serrano peppers, stemmed, seeded and chopped 
Salt to taste
