Healthy Sweet Treats!



Sweet Muffin: Whole grain English muffin toasted and then spread with a thin layer of low-fat cream cheese, sprinkled with blueberries and walnuts and drizzled with honey.



Fruit/Nutella/Peanut Butter: Need a naughty sweet yum-yum with a few redeeming qualities but totally satisfying?
Mix 1 tablespoon of Nutella and 1 tablespoon of peanut butter and warm about 15-20 seconds in microwave. Mix it up. Dip a banana in it or apple slices.

How about baking something that has a few things in it that can justify the naughtiness? These Expresso Dark Chocolate Cookies have oats, cocoa powder, very strong coffee and not much sugar, and if you substitute butter with a healthy spread, voila!



Chocolate Espresso Oatmeal Cookies
(these are extremely moist and chewy)
3/4 c. flour 1/4 c. cocoa 1/4 tsp salt 1/4 tsp baking soda
4 oz butter (1 stick or 1/2 cup) 1/4 c. strong coffee
3/4 c sugar 1/2 tsp vanilla extract 1 1/2 c. oats
1/2 c. semisweet choc chips
Cream butter, sugar, beat in coffee and vanilla. Add dry ingredients. Stir in chips. Roll this into a 2" wide log and wrap in Saran Wrap and refrigerate 2 hours. Heat oven to 350 and cut cookies 1/2-inch thick and cook on greased pan for 8-11 minutes.
